The other day I had the  biggest craving for Thai food.  Being we are trying to save money (and Derek rather not eat Thai) going out to dinner was not an option.  I poked around in the pantry and fridge to see what I could put together.  Coconut milk, baby bok choy, red curry sauce.  Coconut curry soup it was.

Granted baby bok choy isn’t usually kitchen staple, at least in our household, but I had received some in my weekly CSA share and forgot all about it.  Opps!  Paired with some carrots, red onion, and frozen edamame it was a balanced, filling meal.  Even better it came together quickly and was equally delicious for lunch today.

For serving:

sriracha
scallions
cooked noodles (I used buckwheat soba)

Heat oil in large pot.  Add onion , cook 3 minutes.  Add ginger and carrots, stir and cook another minute.  Add broth, milk, curry paste, soy sauce and brown sugar.  Bring to low boil.  Boil 5-8 minutes.  Add bok choy and edamame, return to a boil and reduce to simmer.  Cook until the bok choy is tender.  Add lime juice and salt to taste.

To serve: place a small amount of noodles in bottom of bowl.  Ladle in soup.  Top with scallions and sriracha.
