Time is of the essence right now. Hence the super short post. But I had to share this quick and delicious dinner. Seriously this dinner takes all of 2-3 minutes. Seriously it’s that quick. Sounds pretty great right? Yea it was ☺
Who doesn’t love Mexican bean dip? Who doesn’t love salsa? Who doesn’t love having dinner ready before you can even boil water? I’m not sure anyone one is raising their hand right now. Sometimes I like a beautiful 3 course sit down dinner, other times I need a quick bite in-between my never ending to-do list.
Make this dip ASAP, you will be very happy you did.
2 Minute Bean Dip
Serves one
- 1 Food For Life tortilla
- Chili powder
- ½ cup vegan refried beans
- A splash of hot sauce
- 3 tbls salsa
- 4 cherry tomatoes, halved
Turn oven to broil. Sprinkle chili powder on to tortilla. Place under broiler for about 2 minutes, check after one minute.
Meanwhile, place beans and hot sauce in a bowl, mix and heat in microwave for 45 seconds. Top with salsa and tomatoes.
Cut tortilla into wedges and serve with dip.
That’s it- That was dinner tonight. I know it is not exactly a balanced meal, but it was quick, easy, and yummy. It was so quick in fact I didn’t have time to take a picture. Well actually I had time but this is so damn tasty I couldn’t wait to eat.
